Baked Chicken, Sweet Potatoes and Green Beans

This is what I eat twice a day on my training plan. Sometimes I’ll substitute fish or steak for the chicken.

  • 6oz grilled chicken
  • 1/2 cup of sweet potatoes
  • 1 cup green beans

I use kitchen shears to cut up chicken breasts to small pieces and place in a baking pan sprayed with cooking spray. I season both sides with salt and, in this case, Mrs. Dash seasoning. Bake for 35 minutes at 375º.

I place 3 sweet potatoes in the Instant Pot on the rack and add a cup of water. All it takes is 35 minutes at high pressure. The potatoes are literally mashed when they come out.

I use my digital scale to weigh out 6 – 6.5 ounces of baked chicken.

In the pic I’m also trying a purple sweet potato and the white is mashed cauliflower.

Prepped lunches and dinners for 3-4 days goes into the fridge. My breakfasts are usually 1 egg and 5 egg whites and a piece of wheat toast. Before my gym workout I eat 3/4 cup of plain oatmeal. I also have 2 protein shakes per day. For dessert I can have a cup of fat-free greek yogurt with a cup of berries. Total calories for the day is 2,167.
